Description
Gelatin is a mixture that contains water-soluble proteins with high molecular weight, derived from collagen found in tissues like bones, skin, ligaments, and tendons, and obtained by boiling them. There are two types of gelatin - type A and type B. Type A gelatin comes from acid-hydrolyzed tissue, whereas type B gelatin comes from lime-hydrolyzed tissue.
Biological research highly relies on gelatin as it serves various purposes. For instance, in cell culture, it is used to coat plates and enhance the attachment of cells. It is also used to stabilize Taq DNA polymerase activity in PCR reactions, and as a blocking agent in ELISA, WB, and IHC experiments. In microbiological research, it's used as one of the components of a species-differentiation medium. Lastly, it can be applied in tissue regeneration since it's biocompatible and can be used as a transport carrier to release biochemically active molecules or establish scaffolds.
Gelatin application in the industrial sector is not limited to one product. It serves a broad range of purposes, including tissue-forming agents, stabilizers, and thickeners used during the production of substitutes for rubber, food, adhesives, cement, plastics, lithographic printing inks, photographic negatives, films, and rayon, among others.
The pharmaceutical industry also greatly influences its application. In recent years, it's been used as a tablet binder, suspending agent, and encapsulating agent.
In veterinary medicine, it's a significant product, primarily serving as a plasma expander and hemostatic agent. Overall, the product is made from raw materials like cowhide, and it is a type B gelatin.

Solubility
It is soluble in glycerin and acetic acid, and it is more soluble in hot water than cold water. Almost insoluble in most organic solvents such as alcohols, chloroform, carbon disulfide, carbon tetrachloride, esters, benzenes, ketones and oils.
